Crockpot Macaroni and Cheese - from Lynn C., South Carolina

When I first moved to the South and began teaching here, the first thing I was asked by a student was, "Do you know how to make macaroni and cheese?" I said, "Of course, you open the blue box and follow the directions." Of course, that wasn't what she meant, and when Brittany found out that I did know how to make mac and cheese, the question became, "When are you going to make us macaroni and cheese?" I told her that if she would quit bugging me about it I would make it for my birthday! That hung over their head . . . any time there was a problem, all I had to do was say, "Macaroni" and the problem disappeared! I doubled the recipe below for my jumbo crock pot -- and I used cheap cheese -- YUCK!

Crock Pot Macaroni and Cheese 1 8 ounce box macaroni, cooked
4 cups grated cheese* (DO NOT USE CHEAP CHEESE!)
1/4 cup margarine/butter, melted
1 12 ounce can evaporated milk
1 and 1/2 cups milk
2 eggs, beaten
salt and pepper, to taste

Mix 3 cups cheese with the remaining ingredients in a greased crock pot. Top with remaining cheese. Cook for 2 hours on high, or 4 - 6 hours on low.

*I used cheap, store-brand cheese when I made this for my class as a reward (funny what works for some!) and the cheese got gloppy - the solids separated from the oil. The kids didn‚t seem to mind, but I thought it was nasty. The kids even peeled the crusty parts from the crock pot - I hardly had to wash the pot! :)
