The result is a moist, delicious chicken that made my daughter exclaim, "This tastes just like roast chicken!" I find that it you put in some meats like chicken, pork and small roasts in the frozen state, they cook perfectly on low all day, and will not taste dried out after being in the slow cooker so long. I put this on at 7am and it tastes great at suppertime.

1 frozen whole chicken
1 can Campbell's Golden Mushroom Soup

Put chicken in crockpot. Spoon can of soup over it. Cook on low for at least 10 hours. Serve with boiled new potatoes, or mashed, or rice and a side veggie. Makes a quick, delicious meal.

1 jar spaghetti sauce
Oregano, basil, parsley if desired

Put chicken in crockpot. Spoon spaghetti sauce over chicken. Cook on low for at least 10 hours. Serve with cooked pasta - I like this over rotini, with a veggie such as broccoli on the side.

1 small pork roast, frozen
I can pineapple tidbits
3/4 cup orange juice
2 Tbsp. brown sugar
salt and pepper
mnced or chopped onion

All ingredients into slow cooker. Cook on low for 8-10 hours. Serve with rice and a veggie.

Note: You need a 5-6 quart oval crock pot for this. This chicken tastes very close to one you would buy, precooked, in the deli section of your supermarket.

1 chicken (An Oven Roaster about 8-9 pounds is fine)
Spray olive oil
Lawry's seasoned salt -no substitutes
Aluminum foil

Clean chicken inside and out. Spray with olive oil spray. Sprinkle with Lawry's. Spray inside of crock with Pam.
Note: Do not put any water in the crock

Roll some wads of aluminum foil into balls and put them in the bottom of the crock. The chicken is going to sit on these.

Put chicken back side down in crock on top of aluminum balls.
Cook on High (will not come out the same on low), 4-6 hours.

This is a great recipe that, if you are counting Weight Watchers POINTS, is only 5 PTS a serving!

Yield: 6 - 1 cup servings
2 full cups diced cooked chicken breast
1 (10 3/4 oz) can Healthy Request Cream of Chicken Soup
1 1/2 cups (one 12 oz can) Evaporated Skim Milk
1 cup finely chopped celery
1/2 cup finely chopped onion
2 tsp dried parsley flakes
1/8 tsp black pepper
3 cups unseasoned dry bread cubes

Spray a slow cooker container with butter flavored cooking spray. In prepared container, combine chicken, chicken soup and milk. Stir in celery, onion, parsley flakes and black pepper. Add bread cubes. Mix well to combine. Cover and cook on Low for 6 hours. Mix well before serving.

Here's another tried and true WW slow cooker recipe that my family enjoys.
4 servings, 4 POINTS per serving

4 skinless boneless chicken breast halves
1 package reduced sodium taco seasoning mix
1-cup salsa
2 Tablespoons cornstarch
1/4-cup light sour cream

Spray the Crock-pot with cooking spray. Add the chicken breasts. Sprinkle with taco seasoning. Top with salsa. Cook on low for 6-8 hours.
When ready to serve, remove the chicken from the pot. Place about 2 Tablespoons cornstarch in a small amount of water and stir well. Stir the cornstarch mixture into the salsa sauce. Stir in 1/4 cup of sour cream.

Here are my two all-time favorite crockpot recipes. Everyone loves them and they are great to take to potlucks :-) My original book falls apart on these pages, and both recipes have made it into our family cookbook because we make them often. Enjoy!

Recipe modified from Crockery Cookery by Mable Hoffman, Bantam Books, 1975.

12 corn tortillas, cut into 6-8 pieces each
4 cups shredded chicken
(4-5 chicken breasts boiled and pulled off the bone in bite size pieces)
1 (10 3/4 oz.) can condensed cream of chicken soup
1 (10 3/4 oz.) can condensed cream of mushroom soup
Salsa (any kind you like-I used a recipe shared by my teacher friend, Patty-approx. 4-5 tbs. per layer)
1 cup dairy sour cream
1 tbs. grated onion
3 cups grated longhorn cheese

Lightly grease sides and bottom of slow-cooking pot (crock pot). Arrange alternate layers of tortillas with chicken and mixture of undiluted soups, salsa, sour cream, onion and cheese sprinkled over top of each layer. This amount made 2 layers. Cover and cook on low for 4-5 hours. You can also cook on high to reduce the cooking time to 2-3 hours. Makes 8 servings or more.

Patty's Salsa Recipe:

2 cans tomatoes, drained
2 t. garlic powder
2 t. salt
1 can diced green chilies
6-8 chopped scallions
Cut tomatoes in a blender and add other ingredients.

6 pork chops
2 medium acorn squash, unpeeled
3/4 tsp. salt
2 Tbs. melted butter or margarine
3/4 cup brown sugar, packed
3/4 tsp. brown bouquet sauce
1 Tbs. orange juice
1/2 tsp. grated orange peel

Trim excess fat from chops. Cut each squash into 4 to 5 crosswise slices/ remove seeds. Arrange 3 chops on bottom of slow-cooking pot. Place all squash slices on top; then another layer of remaining 3 chops.

Combine salt, butter, sugar, bouquet sauce, orange juice, and orange peel. Spoon over chops. Cover and cook on low for 4 to 6 hours or until done. Serve one or two slices of squash with each pork chop. Makes 6 servings.

1 whole chicken (the biggest you can find that will fit in your crock pot)
3 tablespoons Old Bay Seasoning (tablespoons is correct!)
1 tsp pepper

Sprinkle chicken all over with seasonings. Put breast side down in crockpot. Cook on low 8-10 hours. That's it. Don't add any water or any other liquid. Superb!


Boneless Pork with Beer and Sauerkraut - from Deb W., New Hampshire

Quantities don't really matter - it depends on the size of your crockpot and your family!

1 - 1 1/2 lbs boneless pork
1 -2 cans sauerkraut with juice
1 can beer (you can substitute broth, white wine, or water. If you use water, add a tbs of vinegar)
salt and pepper

Put sauerkraut at bottom of crockpot. Add pork and salt and pepper. Pour liquid over all. Cook for 8-12 hours on low.

8 to 10 small, thick pork chops (I used boneless pork loin - sliced 3/4" thick)
1 tablespoon of olive oil
1/4 tsp pepper
1/8 tsp sage
1 can (12 oz) cream of mushroom soup - fat free / condensed
1 Tbsp dried onion flakes

Trim the excess fat from the meat. Heat olive oil in a large skillet. (med to high heat), brown each chop lightly on both sides. Lightly pepper each as it finishes and place it in the crock-pot. Sprinkle the sage on top. Turn the soup (undiluted) and add the onion flakes into the still hot skillet. Scrape the pan juices and pour the mixture over the pork into the cooker. Cover and cook on Low for 8 to 10 hours.

Chicken 1

1 package of skinless chicken pieces (trim off any leftover fat)
1 jar of your favorite pasta sauce (I use Ragu no-sugar added basil)
dried oregano & basil.

Place chicken in crock; pour sauce over chicken; top with dried seasonings; cook on low setting for 6-8 hours.

Serve with salad.
The sauce is great - if you allow yourself a bit of pasta, it's a great pasta sauce too.

Chicken 2

6-8 chicken breasts OR 3-4lbs beef roast (I use eye of round)
1 container of fresh salsa from the refrigerated section.(This usually has no sugar)
Meat first, then add salsa. Cook 8-10 hours on low or 3-4 on high. Simple and good.

Chicken 3

Put chicken breasts in crock-pot (no need to thaw, can use straight from freezer).
Pour in light Italian salad dressing to cover.
Add 1-cup water.
Cook all day on low or a few hours on high. Serve with vegetables of choice and a salad.

Chicken 4
Note: Amounts are according to how many servings you are making.

Chicken breast halves
Onions
Green peppers
Salsa
Garlic and/or other spices (optional)

Slice onions and peppers, and put them in the crock-pot first. Cut chicken breasts into chunks, and add them on top of the veggies. Then top with salsa (about 1/2 cup per chicken breast) on top. Cook all day on low or a few hours on high. You can add extra garlic with the chicken and whatever spices sound good that day.

Lemon pepper seasoning
2 tablespoons melted Smart Balance spread
(I added an onion, quartered)

Put chicken (and onion, if using) in pot. Sprinkle generously w/seasoning. Pour melted spread over chicken. Cook on LOW for 10 hours or on HIGH for 6 hours.

1 tbs curry (or less, depending on taste preference)

Pour soup into crockpot and mix in curry. Add chicken. Cook on low 8-10 hours. Serve over rice or noodles.
